Simple heart of palm & tomato salad

Ingredients

  • 400g Palm Hearts
  • 250g Cherry Tomatoes
  • 2 sliced Spring Onions
  • 1 tablespoon Sherry vinegar
  • 3 tablespoons Olive Oil
  • Handful Parsley

Instructions

Mix together the hearts of palm, tomatoes and spring onions. Whisk together the sherry vinegar and olive oil. Drizzle over the salad. Sprinkle with the parsley, toss everything together and serve.
